Blood sugar reading before eating: 96

This reading of 96 was when I got home after working late. My last meal had been about 7 hours before, but I had had some coffee, a banana, and three hard-boiled eggs somewhere in between.

Blood sugar reading after eating: 204

This reading was about an hour after eating my three tacos.

Man, I really wanted this number to be lower! Aren’t those tacos beautiful?

Mexican food has been a staple in my kitchen at home for a long time. It’s easy to make and I could eat Mexican jalapenos all day. I was hoping to give myself the green light to go back to eating chicken tacos every day.

Maybe I can still eat tacos, but not three at a time like I did here. Each taco had two corn tortillas, as is the custom, so that means I ate six corn tortillas in this sitting. Next time, maybe I’ll try ordering just two tacos on flour tortillas. Or I might try ordering a “fajita bowl” (more or less the same as your basic burrito bowl) with one taco on the side.

96 to 204 is too big of a jump to do on a regular basis, so I guess I’ll do what I gotta do to keep Mexican food on the menu!
