Blood sugar reading before eating: 93

This reading of 93 was about 90 minutes after I took the reading of 192 following my breakfast of bananas, carrots, and Korean pear.

Blood sugar reading after eating: 106

This reading was about an hour after I finished eating my spicy tofu soup. Oh, and I also had a 250ml can of Coke Zero (no rum this time).

So … 106?? Wow, it’s like I didn’t even eat anything at all! I get this tofu soup pretty regularly, so I’ll definitely be testing this one again.

If you want to try it yourself at a Korean restaurant, it’s pronounced “soon-doo-boo,” or 순두부 in Korean. “Doo boo” is the Korean word for tofu.

I explained to the restaurant owners that I have diabetes and can’t eat rice, so they usually toss in some extra side veggies and whatnot. On the left is tofu coated with fried egg, and the green/red stuff is (I think) spicy cucumber and scallions, or something like that.
