Diabetes blood sugar before and after: kimchi stew (김치찌개)

Blood sugar reading before eating: 113-114

This reading of 113-114 was basically a “fasting” reading. After getting home from work, I walked my dog Terry and then went to the Eastern medicine clinic for a refresher on my circulation, as per my postherpetic neuralgia regimen. I didn’t eat until 9 pm.

The postherpetic neuralgia is actually close to being a thing of the past (!!), so this visit was really mostly to say goodbye to Dr. Mom.

Oh, and I also got a couple more blood sugar monitors. Sort of just for fun, but also to feel better about accuracy.

These readings were about an hour after I finished my kimchi stew.

I gotta say, this one surprised me. This food came from the same restaurant where that lady always gives me too much. Also, she usually adds ramen noodles to this dish (and the other one), but this time I asked her not to.

But I still got a huge blood sugar spike! A friend of mine thinks maybe she puts sugar in the stew, but that has never once occurred to me. I don’t know if sugar is a common ingredient, but it doesn’t seem like it would be.

Kimchi stew (김치찌개) actually seems like a good candidate for a “safe” thing to eat. It’s salty, but for the most part, it’s just vegetables and a little pork.

I really like this lady’s food, so I’ll try this one more time. I’ll also order the same thing from a different restaurant (where the portion will surely be a lot smaller) and see what happens.

It’s all veggies, tofu, and meat! My blood sugar shouldn’t be spiking over this. Sigh.

Korean food always comes with “side dishes” (from top left, clockwise): egg thingies, jap-chae (잡채) noodles, spicy radish, squash coated in egg. And, no, I don’t think my blood sugar spiked because of the noodles. It was a very small amount, as these side dishes tend to be..
