Blood sugar reading before eating: 102
This reading of 102 was a couple hours after eating a Subway chicken salad.
Blood sugar reading after eating: 132
This reading was about an hour after I finished my spicy pork.
This is the last time I’m going to measure blood sugar before and after eating this dish! Here are the results of all three times I’ve done a before-and-after for spicy Korean pork:
84 → 126
108 → 131
102 → 132 (this time)
And on this particular occasion, I ate way more pork than the other two times. I also ate more veggies. I was just really hungry for some reason, despite having already eaten Burger King and a Subway salad.
So it’s official:
SPICY KOREAN PORK DOES NOT RAISE THE BLOOD SUGAR MUCH!
