Tacos are my main source of subsistence. As such, I have tested the effects of tacos on my blood sugar many times.
One taco with a salad? Totally fine!
Three tacos on corn tortillas? Not fine at all. Muy bad, in fact.
Two tacos on flour tortillas? More or less fine! But I suppose it depends on how thick and doughy your tortillas are. Weighing in at 20g each, mine are not thick or doughy at all.
So that brings us to hard shell tacos. According to Ortega’s nutrition info, their hard taco shells are made from corn, and corn is very bad for diabetics. Also, 16g of carbs from two taco shells doesn’t sound too good.
But I ate SIX tacos yesterday, two at a time, and the results were really very harmless!
Test #1: Blood sugar reading before eating: 97
This reading of 97 was in the afternoon on Saturday. So in other words, “breakfast.”
Blood sugar reading after eating: 118
This reading was about an hour after eating my two tacos.
97 → 118? Well that ain’t nothin!! But is this just a fluke? Sometimes weird stuff happens.
Test #2: Blood sugar reading before eating: 95
This reading of 95 was a little over two hours after getting the previous reading of 118.
Blood sugar reading after eating: 135
This reading was about an hour after eating my next round of two tacos.
OK, this looks a bit more realistic. But it’s still very mild! An increase of only 40 is well within what I would call “acceptable” for eating two very, very loaded tacos.
Incidentally, and I’m not sure if this matters at all, one of these tacos was beef and the other was chicken. In Test #1 and Test #3, both tacos were chicken.
Test #3: Blood sugar reading before eating: 80
This reading of 80 was late at night, over five hours after my previous reading of 135.
Blood sugar reading after eating: 97
This reading was about an hour after eating my last round of two tacos.
I think it’s official: Hard shell tacos (well, at least these Ortega ones) are EASY on the ‘BEETUS! This news is very bueno.
I’ve been limiting myself to eating two tacos at a time because my past tests have shown that three tacos is not nice to the blood sugar. But maybe now I can have my third taco if it’s on a hard shell?
Let’s find out.
Test #4: Blood sugar reading before eating: 103
This reading of 103 was today (the first three tests were yesterday). I hadn’t eaten anything yet cuz this was my first meal of the day.
Blood sugar reading after eating: 175
This reading was about 1 hr 15 min after eating these three gigantic tacos.
So this sounds about right. I had two tacos on flour tortillas and one taco on the hard taco shell.
My past tests of eating just two tacos on flour tortillas sent my blood sugar up about 60-65ish. And now that I’ve added the third taco with the hard shell, I get an increase of 72. Not bad!
So there you have it, diabetics! You may have goddam diabetes, but you can still have tacos without much worry. Just pay attention to what kind of tortilla you’re eating them with.
